Boot to SAN servers

I know a SAN is used to attach storage to a server. How does one go about using a boot to SAN server?

You need what are called HBA cards. It stands for Host Bus Adapter and allows the use of the a SAN for booting. This is a fairly common practice these days and using a SAN gives you many more options for backup/snapshots of data.
