Besides cost, what is the main difference between the two technologies? I haven't worked with any fiber channel or infiniband before just iSCSI.

The technologies are similar but they handle bursts of traffic differently. FC is common on SANs and infiniband is usually seen in large clustered environments where servers are doing a lot of processing of data. Render farms and other clusters used for math research take advantage of inifinband because the latency is lower, and the I/O is better all around. As you indicated in your post, the cost of deploying infiniband is much higher than FC.
